Corn Momos

There is a special Momos Shop around my sister’s classes where they make variety of Momos. My sister always use to ask me to make Momos at home but I kept on delaying it. Then Tupperware sent me their newly launched Steam It for testing purpose and I finally decided to make Momos in it. So here it is, my first Momos attempt.

Corn momos recipe:

Makes 10 Momos

Ingredients

For the dough:

All purpose flour – 1 cup
Oil – 1/2 tablespoon
Salt – to taste
Water – as required

For fillings

Corn Kernels (boiled) – 1 & 1/2 cups
Onion (chopped)- 1 small
Tomato (chopped) – 1 small
Green chillies (chopped) – 1 – 2
Oil – 1 tablespoon
Cumin Seeds – 1/2 teaspoon
Ginger-Garlic paste – 1 teaspoon
Red chilli powder – 1 – 2 teaspoon
Coriander powder – 1/2 – 1 teaspoon
Amchur Powder – 1/8 – 1/4 teaspoon
Turmeric – a pinch
Salt – to taste
Sugar – 1/2 teaspoon
Tomato Ketchup – 1/2 tablespoon
Coriander leaves (chopped) – 2 tablespoons
Water – as required

Method:

For the dough:

Take all the ingredients in a bowl, mix well and knead a soft dough out of it. Cover and keep it aside for 15 – 20 minutes.

For fillings:

  1. Heat oil in a non-stick pan, add cumin seeds and let it splutter.
  2. Now add onions and green chillies to it and cook till the onions turn translucent.
  3. Add ginger-garlic paste and cook till the raw smell vanish.
  4. Add tomatoes and fry a little. Add all the spice powders, salt and sugar with little water and cook till oil separates.
  5. Now add corn kernels and tomato ketchup, mix well and cook until the filling is all dry.Turn off the flame.
  6. Sprinkle chopped coriander leaves and mix.

How to make Momos

  1. Take the kneaded dough and make 10 – 12 equal round balls out of it.
  2. Take one ball at a time, flatten them with a rolling pin into round shape. Try to keep the middle area thick and the ends thin. (Check note 2)
  3. Put some fillings in the center of the rolled dough. Pick up the end from 1 side and make some pleats of it. Do this with the remaining 3 ends too. Now join all the pleated sides and press it tightly so that it doesn’t open.
  4. Alternatively, you can pick all the sides together, join them and twist the joined ends clockwise from the top. Or you can even shape them like Singoli or gujhiya.
  5. Make all the momos in the same way.
  6. Steam the momos for 10 – 15 minutes until they turn translucent.

Notes:

  • Keep rest of the dough balls covered while you are working with one. Or else they will become dry.
  • For keeping the center of the rolled dough thick and the ends thin, roll only half of the dough with rolling pin. After that use your fingers to flatten the ends.
  • Use a wok steamer or idli/dhokla steamer for steaming momos. I used my tupperware steam it.
  • Adjust spices according to your taste.
  • You can fill anything in the momos. The covering and steaming process will be same everytime.
